The famed Perigord black truffle "Tuber Melanosporum" delivers unparalleled flavor and a pungent earthy and musky aroma, coveted by chefs and gourmands alike. Harvested during the winter in the peak of their maturity, these whole winter black truffles are graded "Extra", which means they are the second highest of grades. They have also been brushed and cleaned, so they are ready to be sliced or shaved over your dishes (we recommend pasta and risottos). Preserved in a very small amount brine -also known as truffle juice- which can be used for other preparations.
